Loyalty cards for a café
A café has close to ideal conditions for a stamp card: people come often, spend little, and decide between you and the place across the road on habit alone. That is exactly what a card is for.
Your regulars visit more often than anyone else's
A café regular might come three or four times a week. That is typically the highest of the trades a stamp card suits, and it changes every decision below.
It means a longer card still finishes quickly. Eight to twelve stamps is reached in two to three weeks by a real regular, close enough to stay interesting, long enough that the free coffee is not costing you every fourth sale.

The reward should be the thing they already buy
A free coffee after eight coffees is roughly 11% off across the run, and it is the reward that works because it is what they came for anyway.
Resist making the reward something bigger than the purchase. A free pastry against eight coffees costs you more and reads as less relevant, the customer was buying coffee.
The morning rush is the real constraint
At eight in the morning nobody has time for anything. This is why the stamp is approved by staff rather than typed into a till system: it is a tap, and it happens while the coffee is being made.
If even that is too much at peak, print a one-time code on the receipt instead. The customer scans it on the way out or later, and your hands never leave the machine.
A cooldown stops the same person collecting twice in one visit. Sixty minutes is the default and it suits a café well.
Setting it up
Use the coffee stamp, it is one of the 27 styles, and a customer recognises what the card is for before reading a word of it.
Set your colours from your signage rather than the default. A café card sitting open on a phone at your counter should look like your café.
